There is an updated post with a way better Hummus recipe  here.  This one is still good but way too complicated and the new one really shines because of the “secret” directions.  Enjoy!

I’ve been eating Hummus (Chumos) since I can remember eating anything.  It pretty much goes with everything, Salads,Hamburgers,Falafel, on Bread,  licked off your fingers :-p

So here it is, the best Hummus recipe you can make at home:

Ingredients

  • 15.5oz (439 grams) of chickpeas in a can.
  • 2-3 tablespoons of olive oil.
  • 3/4 teaspoon cumin.  (Cumin is very  potent,  don’t over do it)
  • 1/4 teaspoon black ground pepper.  (Same, don’t go over 1/4)
  • 1/2 g teaspoon salt.
  • 1 teaspoon garlic powder.
  • 2 teaspoons of minced garlic – This translates to about 3-4 cloves of garlic.
  • 3/4 to 1 lemon squeezed.
  • 1/4 teaspoon chili poweder.
  • 3 tablespoons Tahini – It’s key to have good Tahini, I highly recommend Ronald brand, it’s made in  Israel  and it’s superb.

Directions

  1. Drain the can of chickpeas.
  2. Boil chickpeas for 20 minutes covered with water (occasionally  stir).
  3. Drain water to a cup (for later use).
  4. remove the white shell off the chickpeas.
  5. Mix everything in a food processor (but the water and leave 10 chickpeas or so aside).
  6. Add water (the one you saved) until nice smooth and a little drippy.
  7. add the extra chickpeas and mix a little.  This will give nice smooth hummus and some texture.
  8. The hummus will thicken as it chills in the refrigerator.  (as an option,  if the water left is not enough use milk instead of water)

Enjoy!  Think of a way your recipe is better? post a comment, I would love to hear from you.
