Curried Rice Recipe – Curry Rice

Ingredients:

1/2 finely chopped onion (White.  Sweet would work)
2 garlic cloves, minced
1 Tbsp vegetable  oil
1 cup basmati  rice
1/2 teaspoon curry powder
2 tsp chicken or vegetable consommé
Black pepper to taste.
1/2 cup raisins (optional)
1/2 cup chopped almonds, toasted (optional)

Directions:

Saute the  onions  and minced garlic, eczema add 3 cups of water, consommé, curry.  Wait for it to boil. Add Rice.  Cook covered, stir from time to time, until water level reaches the rice.  At that point reduce to medium and continue to stir every few minutes (so it doesn’t burn on the bottom).  Reduce to low when it’s almost done.  Add almonds and raisins, cook for a few more minutes and Voilà.
