{"id":1981,"date":"2012-01-25T00:33:03","date_gmt":"2012-01-25T05:33:03","guid":{"rendered":"http:\/\/www.extrafudge.com\/?p=1981"},"modified":"2017-07-18T10:14:47","modified_gmt":"2017-07-18T14:14:47","slug":"israeli-or-mediterranean-sambusak-recipe","status":"publish","type":"post","link":"https:\/\/www.extrafudge.com\/site\/2012\/01\/israeli-or-mediterranean-sambusak-recipe\/","title":{"rendered":"Israeli or Mediterranean Sambusak Recipe"},"content":{"rendered":"<p>My mother used to make sambusak all the time.<\/p>\n<p>Here is a good recipe.<\/p>\n<p>For the Dough:<\/p>\n<ul>\n<li>1 1\/2 tsp dry yeast<\/li>\n<li>1 teaspoon salt<\/li>\n<li>1 teaspoon baking powder<\/li>\n<li>2 teaspoons sugar<\/li>\n<li>1 cup water (Warm)<\/li>\n<li>3 cups all-purpose flour<\/li>\n<\/ul>\n<div>How to make the dough:<\/div>\n<div>Dissolve the yeast in the water \u00a0until \u00a0foamy.<\/div>\n<div>\n<p>Mix the salt , \u00a0baking powder,  \u00a0sugar, flour (leaving a little to add as needed) add water and mix.<\/p>\n<p>Knead dough until firm.  \u00a0(All this can be done in a food processor)<\/p>\n<p>Cover the bowl and allow the dough to rise for 2-3 hours.<\/p>\n<\/div>\n<div>For the filling:<\/div>\n<div>\n<ul>\n<li>1 extra large onion, chopped<\/li>\n<li>1 teaspoon vegetable oil<\/li>\n<li>1 (15 ounce) can garbanzo beans, drained and lightly mashed (just crush them a little with a \u00a0wooden \u00a0spoon or the bottom of a cup)<\/li>\n<li>1\/4 bunch fresh cilantro, finely chopped<\/li>\n<li>1 teaspoon ground cumin<\/li>\n<li>1 teaspoon ground coriander<\/li>\n<li>salt and ground black pepper to taste<\/li>\n<\/ul>\n<div>Saute the onions until light brown, add the \u00a0garbanzo beans, cilantro, cumin, coriander, salt, and black pepper and mix for about a minute on medium heat.<\/div>\n<\/div>\n<div>Roll the dough thin and cut 3&#8221; circles  \u00a0put enough filling and close the circle on itself to shape of a half circle.  \u00a0 Fry \u00a0until \u00a0golden brown.<\/div>\n<div>Note:  \u00a0In some places it&#8217;s customary to add eggs to the sambusak, I don&#8217;t like it.  \u00a0If you like it then for each or a few pieces of sambusak add the following:<\/div>\n<div>\n<ul>\n<li>Break an egg into a greased cup \u00a0cover with paper.<\/li>\n<li>Cook in a microwave oven on High setting for 30-40 seconds.
